In this case, they'll quickly realise they're outgunned, so they beam Sulu over, disguised as an imperial navigator. He bluffs his way into the bridge and relieves the real navigator. Of course he's found out, but not before he locks the the destroyer on a course into the neutral zone. Just before he gets shot, he's beamed back to the Enterprise because Scotty had a lock on him the entire time.
The Romulans then destroy the Imperial Ship out of general principle.

Again, their awesome ideas at the last moment saves the day. One ensign is on the engineer path and he has been toying with the idea that 20 phasers daisy-chained together set on overload would make for a pahse-bomb that would put the stormtroopers in an alternate reality.
Of course, this idea is never been tested and there are millions of things that can go wrong because nobody knows what really will happen. A Vulcan ensign even believes that it will end the Federation of Planets as we know it!
But having no other options left to them, the engineer-ensign gets the green-light to daisy-chain the phasers and overload them.
Of course, it works like a dream and the ensigns win.

as for the ensigns, meh, stormtroopers every time, there's no hero's for them to shoot at so they should be spot on with their aim-bots while the random ensigns get killed in every single episode of trek

Sadly I have to give it to the storm troopers. - If they were good ensigns they have already been promoted which leaves us with the red shirts...and those were born cannon fodder.

Stormtroopers would win. They would pretent to want peaceful coexistent with the Federation, suggest they put down their weapons and talk it over. The gullible Federation Idealistic Ensigns put down their weapons to engage in negoations and are then vaporized.
