Sometimes I really hate my dreams.

I had a dream. I was in charge of restoring the White House. It seemed as though it was two hundred or so; years in the future.

There were soldiers everywhere. It seemed I was one of them.

The White house used to be about two miles long. Parts of it had fallen down.

I got the feeling that it was just a restoration project. The White House was no longer a functional part of today.

There were buildings close by, that resembled Roman structures, maybe Greek.

They had great pillars, covered in thin moss, they were colored from reds to greens.

I kept hearing this song in my head all the while.

(The first line is from the dream, the rest I pieced together.)

The stars of fall are in my eyes

The time is now for our reprise

Say goodbye to starry skies

You trusted who you thought was wise

My wife's fish taco (yeah I know) :)

  • EVOO
  • butter
  • 4 chipotle peppers (canned)
  • 1 shallot, minced
  • A lot of garlic cloves, minced
  • Garlic powder to taste
  • Kosher salt and cracked black pepper to taste
  • dried minced onion to taste
  • fresh cilantro to taste
  • 2 cup chicken broth
  • 2 large tomatoes (from the vine), diced
  • 2 cans of diced green chilies
  • Chili powder
  • 8 Tilapia fillets (I was cooking for 4 adults, 2 with manly appetites)
  • 12 corn tortillas (you can use taco shells or flour but corn tastes better)
  • Corn starch


My husband hates the texture of onions so I mince the shallots and use dehydrated minced onion (in the spice isle). When cooking long enough, he cannot detect the texture.
 
I can’t handle a lot of spice so I took a can of extra hot chipotle peppers from the cupboard and took 4 peppers out and quickly rinsed the adobo sauce off and minced the peppers.
 
Heat EVOO large skillet over medium heat, add bit o butter and sauté the chili (red and green), shallot, minced onion, and garlic until translucent. Season with salt and pepper.  Yell at dogs to get out of kitchen.
 
Since my skillet was not large enough to cook 8 fillets at once, I cooked them half way in a separate pan and added it to the mixture when called for to finish cooking. Expect the fish to fall apart – works out great. Yell at dogs to get out of kitchen.
 
Mix the chicken broth (start with 1 cup and added as desired) and tomatoes into the skillet, and season with cumin. Bring to a boil. Reduce heat to low. Place the Tilapia into the mixture. This is where I think something is missing and raid my spice cabinet. Add all other spices to taste (or not at all) and finely chopped cilantro. Cook 15 to 20 minutes until the fish is done. Yell at dogs to get out of kitchen.
 
Next part optional:
Strain juices into small pot. Bring to simmer. Mix cornstarch and cold water in separate bowl. Mix until dissolved. Add cornstarch mixture to simmering juice to create sauce. I don’t use any measuring so I couldn’t tell you how much I used. You could add sour cream instead of mixing cornstarch. Yell at dogs to get out of kitchen.
 
Heat oil in pan (10 lbs cast-iron pan on ceramic stove top works great; just don’t tell the landlord). Fry up corn tortillas into taco shapes. If the bagger at the store destroys your recently purchased bag of corn tortillas by putting them in the same bag as large boxed items and not using a separate bag like a person using the smart part of their brain, use the broken bits as corn chips. Season with kosher salt. Throw corn chips into backyard to make dogs leave kitchen, lock door, close blinds, eat and enjoy; ignore the Rottweiler pawing the sliding-glass door.
